Garlic Scape Pesto

(adapted by Kara and Gabe from a recipe found on the internet somewhere)
  • 10 fresh garlic scapes
  • 1/3 cup parmesan cheese
  • 1/3 cup pine nuts or almonds
  • 1/2 cup olive oil
  • salt and pepper to taste
Blend scapes in a food processor until well diced.  Add pine nuts, cheese, salt, pepper, and half the olive oil and blend some more.  Slowly add the remainder of the olive oil while blending.  Can freeze in ice cube trays for later use.  Makes about enough to coat one pound of pasta plus a dozen ice cubes.  Very garlic-ey!
